  • 3 pounds potatoes thinly sliced
  • 2 tablespoons of butter
  • 1 cup onions
  • 4 cloves of garlic
  • 2 cups shredded colby-jack or cheddar cheese
  • 2 cups diced ham
  • 2 cups of milk
  • 2 tablespoons of cornstarch
  • Salt and pepper

  1. Slice potatoes with a mandoline.
  2. Saute onions and garlic in butter till onions are slightly caramelized.
  3. Start with buttering the casserole crock pot dish. Just swipe the stick of butter all around.
  4. Then layer a single layer of potatoes. Liberally season with salt and pepper then put half the onions over top of the potatoes. Follow with half the ham and shredded cheese.
  5. Then repeat.
  6. When the last piece of shredded cheese hits the casserole, mix together milk and corn starch till completely dissolved. Pour over top of the entire casserole.
  7. Pop the lid on and cook for three hours on low.
