Ingredients

Jalapeno Popper Meatballs

  • 2 pounds ground beef or pork
  • 4 ounces cream cheese
  • 1 cup cheddar shredded cheese
  • 1/2 cup parmesan cheese
  • 3 cloves garlic, minced
  • 2 Jalapenos, seeded and chopped
  • 1 egg
  • 1 teaspoon pork seasoning

Low-Carb Cheese Sauce

  • 4 ounces cream cheese
  • 1/3 cup heavy whipping cream
  • 1 cup cheddar cheese

Instructions

  1. Combine all the meatball ingredients in a bowl. Using a mix and chop or your hands, completely incorporate all the ingredients together.

  2. Roll into golf ball-sized meatballs. Place in a large skillet or braiser. Brown on each side for 5-7 minutes and then place the lid on the skillet and turn to low heat for 10 minutes.

  3. To make the cheese sauce, mix the three ingredients together over medium-low heat until melted.

  4. Serve meatballs with toothpicks for dipping into the sauce.
