Arugula Salad with Burrata, Prosciutto, and Basil
Arugula salad with burrata and a homemade vinaigrette that will elevate your summer dinner.
Ingredients
Arugula Salad
- 4 cups arugula
- 6 slices prosciutto
- 4 balls burrata
- 1 cup cherry tomatoes
- ¼ cup basil leaves
- Salt and Pepper to taste
White Wine Vinaigrette
- ¼ cup white wine vinegar
- ¾ cup extra virgin olive oil
- 2 tablespoons dijon mustard
- 1 clove garlic
- ½ teaspoon honey (optional)
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Place the arugula in a shallow serving bowl.
- Top with the burrata cheese, torn prosciutto, and cherry tomatoes. Season with salt and pepper and place the basil leaves.
- In a small mixing bowl or jar, combine the white wine vinegar, Dijon mustard, minced garlic, and honey (if using). Whisk them together until the ingredients are well combined.
- Slowly drizzle the extra-virgin olive oil into the bowl while whisking continuously. This will help emulsify the dressing and create a smooth consistency.
- Continue whisking until the dressing is fully blended and slightly thickened. This should take around 1-2 minutes of vigorous whisking.
- Taste the vinaigrette and season it with salt and pepper according to your preference. Adjust the flavors as needed by adding more vinegar, mustard, honey, or olive oil to achieve the desired balance.
- Drizzle vinaigrette over the salad.
- May serve with croutons if not eating low carb.
