Canning Green Beans
Now back to those beans. At first, we weren’t sure we were going to have beans. Heather, my other girlfriend canning beans with me, had the hook up from her hubby’s family. They run a farmers market on the outskirts of Columbus. But, it has rained a lot here in Indiana and their patch of beans that should have been ready were not going to cut it. So, Amy’s mom came through. One of their Amish friends was able to hook us up with two bushels of green beans. Amy’s mom is becoming my hero. She is also the provider of the all-time best chocolate chip cookies. Amy’s second sister, Mindy, ran to get them for us.
Amy was smiling the whole time. Reminiscing on her first 16 years of life. She has great stories. Stories like getting up at 4:30 am to do laundry with a wringer machine before the heat of the day. Her mom said she is so thankful for the electric washing machines she has today. I hate laundry with an electric washer I can’t imagine having to wring it by hand!!
Heather and I spent a lot of time laughing and poking fun at Amy. That is what girlfriends do, right?
So, Amy started packing the beans as Mindy washed the beans inside for us. Heather and I remained busy snapping. Snap. Snap. Snap. Then Mom came out. She fixed all the beans Amy had packed. It was so cute. She knew we could get the beans tighter in the jars. She pounded those quart Ball Mason jars against her palm and shook them down.
Aren’t these jars so pretty? My momma actually used gave them to us to use. She used to can beans. Then she figured up how much it would cost to buy them at the store. The next year our garden was grass. Now, I think I need to live like a pioneer woman. These jars were not only my moms but also my grandmas. They are the good old jars that don’t break so easily like the new ones.
Amy took plenty of time to love on her sisters. Her she is with the baby. Number 8 and the baby. They miss each other. Too bad Amy’s husband won’t let them live with her family.
While all this bean snapping and packing is going on, Amy’s mom whips up four loaves of bread. I am starting to fall in love with her now.
So, the packed jars moved into the kitchen for salt and water.
Did I mention there were four loaves of bread rising?
So, a teaspoon of salt went into each jar.
Followed by water. Each jar was filled 3/4 of the way full.
And then into the pressure cooker went seven jars.
Then on with the lid and up with the heat.
My mom also had a pressure cooker, so we waited for the steam to come and set the pressure at 10 pounds and waited. Then like magic, lunch appeared for Amy’s family, Heather, myself, Brady and Maddie. But all I wanted was this.
Amish Peanut Butter
Amish Peanut Butter. A mixture of marshmallow cream, peanut butter, water and a little bit of brewed coffee. They told of how this is a mainstay in most Amish homes. On Sunday, the family that hosts church also provides a meal. This peanut butter was always served. Always. Maybe I could be Amish. Ok, maybe not because of that little laundry issue, but this stuff is good.
Did I mention bread? Can you imagine Amish peanut butter on homemade bread? I didn’t imagine, I gorged.
I know this is going to be in heaven. We ate two loaves of bread at lunch. So, Amy’s mom sent the other loaves home with Heather and I. Just what we both needed.
By then we were back to the beans. They were done and ready to be boxed for resting the next few days.
I just know this winter, this wonderful day will bring a smile to my face each time I open a can of these beans!
Peanut Butter Recipes
Amish Peanut Butter
- 2 cups peanut butter
- 2 cups marshmallow fluff
- 1/3 -1/2 cup honey
- 1/3 cup coffee or water
- In a sealable container, combine peanut butter, marshmallow fluff, honey and coffee or water.
- Stir or beat with a mixer till completely combined.
- Serve on bread or with crackers.
