Quick meals are a must in our house. It is always a mad rush to figure out what to make for supper when I get home from work. I wish I was better at meal planning, but planning is just not my strength. Things like quick to cook ravioli have become a staple in my house so I can make things like this meaty tomato ravioli soup.
Meaty Tomato Ravioli Soup is a 30-minute meal combing ground beef, canned tomatoes, ravioli and parmesan cheese for a hearty and easy dinner recipe.
Meaty Tomato Ravioli Soup
This soup is super easy to make thanks to the help of some canned tomato products and if you make your ground beef quickly. When we don't make the ground beef ahead in the crock pot, we make ground beef in the microwave in our micro-cooker. While the ground beef is browning, add a can of petite diced tomatoes and tomato puree to a large saucepan or dutch oven. Also, add a can of water to the sauces.
To the tomatoes, add diced onions and garlic as well as some fresh or dried herbs. I used fresh parsley and my pasta sprinkle. Since the tomatoes were not seasoned, also add salt and pepper. When you get the sauce going, get a pot of water going for the ravioli. Cook the ravioli a minute or two less than the package calls for. You don't want the ravioli to get too soft.
When the beef and ravioli are cooked, stir in the beef and then the ravioli. To the top of the soup, add grated parmesan cheese. Stir to combine and you are ready to eat this meaty tomato ravioli soup.

Meaty Tomato Ravioli Soup
Ingredients
- 1 pound ground beef
- 14.5 ounce can diced tomatoes
- 28 ounce can tomato puree
- 2 cups or 1 diced tomato can of water
- 9 ounce package ravioli
- 1 cup diced onions
- 2 cloves garlic minced
- 1 tablespoon fresh parsley
- 1 tablespoon pasta sprinkle
- ½ cup grated parmesan cheese
Instructions
- Begin by browning hamburger, either in the microwave or in a pan over medium heat.
- Cook the ravioli according to the package direction, minus a minute or two in order to keep the ravioli from getting too soft.
- In a large saucepan or Dutch oven, combine the diced tomatoes, tomato puree, water, onions, garlic, parsley, and pasta sprinkle.
- When the beef is cooked, stir into the tomato mixture. Add the ravioli to the meat and tomatoes. Stir in the parmesan cheese.
- Serve with extra parmesan and fresh parsley.
